Gin Roasted Plums

“Using only a handful of ingredients, this recipe is quick and easy to knock together, but the end result suggests much, much more. Sweet plums, bitter gin and Christmassy orange makes this the perfect winter pud. Serve with a generous dollop of vanilla infused crème fraîche.”

12 plums, haved and stoned
150ml of Graveney Gin
Juice of 1 orange
60g caster sugar

1. Preheat the oven to 200°C/fan 180°C. Put the plums in a large roasting tin, cut side up.

2. Mix Graveney gin and orange juice and pour over the fruit. Sprinkle with the sugar and bake for 15-20 minutes, until tender.

3. Using a slotted spoon, transfer the plums to a large dish and keep warm. Put the roasting tin over a high heat on the hob. Bring to the boil and cook for 3-4 minutes or until reduced and syrupy.

4. Cool, then pour the syrup over the cooled plums. Serve with shortbread and crème fraîche.
