What to Try

Jamie Guy, head chef of HIX will take over Saturday 29 July in a family affair. Jamie and his wife Nicki will be cooking up a selection of dishes that Jamie has been developing over the years. The dishes will bring together the HIX ethos – fresh, seasonal produce with some of Jamie’s favourite ingredients (duck hearts, mackerel, fennel, kohlrabi). Indulge in Pork Kofta with apricot, fennel and chilli; Duck Heart Kebabs with pickled lemon and tahini; or Chargrilled Mackerel.

Grant Harrington will take over 5 August. After working as a chef in fine dining restaurants such as Maze and Fäviken, he was inspired to learn why traditional and ancient butter making techniques produced a more flavourful, buttery, product. Indulge in a buttery feast including the Cultured Butter burger, classic caramelised onions and cheese; Mature aged cultured butter burger, with buttermilk curds, whey fried onions; Whole Deep fried buttermilk quail. And to end? A Buttermilk pie with whipped sour cream.
