London hotspots The Book Club and Stories have shared this simple yet spectacular Beer and Bacon ‘Mancakes’ Recipe with us this Pancake Day. Secret ingredient? You guessed it…. craft pale ale. Not just for men. Get flippin’!

Ingredients

  • 3 Eggs
  • ½pt Milk
  • ½pt Beer (Craft Pale Ale)
  • 325 g Self-raising flour
  • 1 dessert spoon Baking powder
  • 1 dessert spoon Soft brown sugar
  • 50g Butter
  • Streaky bacon, a fried egg and Maple Syrup to garnish

Method

  1. Mix all the ingredients together in a blender or with a hand whisk. Simple
  2. Rest for 10 minutes
  3. Pre-heat a non-stick frying pan on a medium-high heat
  4. Ladle a good size dollop of mixture into the pan
  5. When bubbles appear on the surface turn the pancake using a fish slice (or flip if you’re feeling brave!)
  6. Cook for a further few minutes
  7. Top with crispy bacon, a fried egg and maple syrup. Enjoy!
