What range of dishes do The Hour Glass serve?

At The Hour Glass we serve a wide range of fresh cooked food: for the pub we have dishes like buttermilk fried chicken, homemade pie and mash, croque madam, fish and chips or tuna nicoise. Or if you want more fine dining we have the restaurant upstairs serving parmesan and asparagus custard, salmon ceviche with pink peppercorns, beef cheek croquettes or fillet of bream with clams. And for those that have a sweet tooth there’s baked chocolate cheesecake with toasted marshmallow; mango and pineapple baked alaska; and strawberry and cream profiteroles.


Tell us about your background and how you came to The Hour Glass...

I’ve been a chef for 14 years – I’m classically French trained under the tutelage of Andrew Turner and in that time I’ve worked in some of the best hotels across London and some private members clubs.


Where do you source your ingredients from?

All the ingredients that we use are locally sourced – we try to use the best local and seasonal products. I don’t have a favourite product or ingredient, as I love to work with all food and do my best to show it in my cooking.

Where do you get inspiration for the traditional bar snacks alongside more modern dining?

My inspiration comes from everywhere from childhood, books I’ve read, things I’ve seen on TV, places I’ve eaten walking around food markets and all the people I’ve worked with over the years.
