The recipe is, unsurprisingly, a closely guarded secret but Marzia and Matteo didn’t mind sharing with us some of their wonderful fillings. Tip: it’s also good with salad and some gherkins on the side.” The Greenwich Market Cookbook

Ingredients | Serves 4 | Allow 7 hours cooking time

1kg pork shoulder, skinned and boned
1 tbsp dark brown sugar
1 tablespoon salt
½ tsp ground cumin
¼ tsp ground cinnamon
1 white onion, sliced
1 garlic clove, finely chopped
BBQ sauce


1. Preheat the oven to 170ºC. Cut the pork shoulder into three or four big pieces and trim any excess fat and skin, then pat dry with a towel.

2. Mix the sugar, salt, cumin and cinnamon in a small bowl then rub it evenly all over the meat.

3. Put the pork in a high-sided roasting tin and add the onions and garlic.

4. Pour in 250ml water, cover tightly with foil and put in the oven to roast for 7 hours.

5. When the pork is cooked, take the pieces of meat out of the cooking liquid and scrape off any onions or garlic. Using two forks, shred the meat into small pieces.

6. Serve in flatbreads or floury baps, drizzled with as much BBQ sauce as you like.
