What to Expect

There’s a fusion of flavours from Japan, Brazil and Peru in the cocktails. If you’re dining, you’ll find a great new initiative to support, as well as delicious, fresh ingredients.

What to Drink

If you love whisky, then these two are for you: the Bincho Double Black Sour for fresh flavours, including whisky, toasted coconut and spiced sugar, shaken with Japanese citrus, egg white and activated charcoal; or the Sesame Old Fashioned for a headier drink with sesame-washed whisky, salted caramel and maple.

Like your fruit? Order the Plantain Punch for flavours of Brazil and Peru – Bacardi Carta Negra rum, plantain purée and wine, mixed with egg white, banana, cacao and a coffee infusion.

Sake lovers must try the Seasonal Sake Spritz, with Sake, St. Germain, plum and fig vinegar. For more Japanese flavours, try the Miso Mule – a mix of Grey Goose vodka, lime, ginger and a miso and
coconut reduction.

And finally, indulge in the Cheeky Monkey Monkey Shoulder whisky and plum wine, seasoned with cherry bitters and topped with ginger ale.

SUSHISAMBA have a new partnership with Cool Earth to raise awareness and funds for their initiatives to halt the destruction of the rainforest. Don’t miss the Asháninka menu in December, inspired by and using ingredients that have been grown in the Peruvian rainforest by the Asháninka themselves, Peru’s largest indigenous group.

Indulge in dishes including Porco do Mato – pork belly marinated in pork jus, Asháninka coffee, plantain, passion fruit and sesame – and Welcome to the Rainforest, which combines Asháninka coffee, cacao, vanilla and pistachio. Finish the menu with the Asháninka Forest – black raspberry liqueur infused with Asháninka coffee and topped with champagne.

Cool Earth works together with 116 indigenous villages to halt rainforest destruction, giving the local people control of their homeland to keep the forest intact.
