Spurred on by the success of Andina‘s quinoa burgers, sister restaurant Peruvian kitchen Ceviche is turning its hand to burgers, launching a lunchtime special each month.
What to Expect
Think you know Peruvian cooking? Think again. Five-year-old restaurant Ceviche has created a set of four lunchtime burgers that fuse everything you love about the all-time favourite with original ingredient combinations from across the globe.
This is not just another burger gimmick. An ambassador for Peruvian food and arts, founder and award-winning chef Martin Morales explains how each burger was created to reflect the various cultures that arrived in Peru across the centuries.
What to Eat
We give thanks that the Japanese settled in Peru in the late 1800s – Martin has taken the culture’s key ingredients and added a Peruvian twist to create a beautiful, fresh 21st-century fish burger with a kick. The Nikkei Burger, a bumper salmon patty finished off with avocado wasabi and stand-out squid ink bun, launches this May.

Set an alarm for the launch of July’s Criolla Burger with coriander bun (complete with coriander seeds), anticucho patty and sweet rocoto chilli sauce. Then August sees the Chinese contender, the Chifa Burger with duck patty and sweet green chutney inside a steamed bun. And (spoiler alert) a surprise fried egg.
