What to Expect
Fresh after Brewery Below’s launch with unique dining concepts Sakura and Rawmen from The YBFs winner Adam Rawson, this is the latest pop up to hit your senses.
Having worked at Fera @ Claridge’s, this is Michael’s first solo dining concept, and it promises to be exciting.
Expect a love and appreciation for all things local here, with ingredients being sourced from the Food Assembly – a network of neighbourhood food markets, as well as seasonal ingredients found and foraged by Michael.
What you will try
Fodder will take you on a journey through the senses with a sumptuous and beautifully presented nine-course menu.
Our highlights include the Chicken Fat Bao, soft bao dough oozing with a chicken heart and pickled ramson filling and topped with crispy chicken skin for umami and crunch.
We can’t forget that Mackerel on squid ink cracker, think fresh tastes of the sea here. The journey continues with Crab, elderflower and tomatoes.
Set Birch Sap and Beech Leaf, a beautiful pre-dessert, will take you straight for a taste of the forest, and the heart of this pop up, celebrating the flavours of these ingredients. Look out for the Freya birch spirit, which complements this dish.
Splash out a bit extra for a beer or wine flight designed to complement the food.
