Growing up in Mumbai, street food has always been a big part of my life – literally a way of living there
Interaction with diners and “the ability to make them feel at home” is something Mitz highly values and gained from his time as sous chef at The Palomar. He will also take with him “the hospitality and confidence of sticking to your roots as a chef” when the restaurant opens.
And what about his nod to street food and the spice trail for inspiration?
“Growing up in Mumbai, street food has always been a big part of my life – literally a way of living there. After travelling across Canada and working in different kitchens, it just seemed fitting to stick to my roots and apply the culinary experience I gained over the years alongside a love for Asian food.”
What to Eat?

Spiced sweet potato fritters
You definitely get a sense of spice with the dishes, which complement each other really well. We started with the Spiced Sweet Potato Fritters served with a fragrant saffron coconut curry.
The main plates are as tasty as they are beautifully presented. There’s the tender Pork Belly paired perfectly with apple and green papaya, tamarind BBQ and toasted cashews or our must try is the Hake with tamarind, fennel, coconut, crispy chickpeas, okra, coriander and kale.
What to Drink

Chai Old Fashioned
The spice trail continues in a few of the cocktails. We loved the twist in the Chai Old Fashioned with Chai, Woodford Reserve whiskey, blood orange liqueur, Angostura bitters and maple syrup.
Don’t Miss
To round off this culinary journey, go for the Panna Cotta, a flavour sensation of coconut, lychee and Thai basil with a subtle kick from the chilli and chocolate crumble on top – and all served in a coconut shell.
