Top 3 Tips before you get started…

1. Fine Italian flour 00 works best for making your own pasta.
2. When working the pasta up and down the pasta-maker settings, always stop on the penultimate setting. See video for more detail.
3. When dusting your pasta with flour use four fingers and your thumb to flick. No sprinkling in this kitchen.
