Top Dog started out with a menu of hot dogs. What brought on the addition of burgers?
Soho is a very well-serviced area with lots of food on offer. Customers’ expectations are high; so by widening our menu we are able to meet those expectations. With our burgers we make a smashed patty and chargrill it. This method means ultra-juicy, smoky and consistently good burgers, served FAST!
Top Dog’s formula to a great tasting hot dog?
I could go on for hours about the bread-to-meat ratio, butter content in brioche, spice mix and smoking times for sausages but I don’t want to bore you. Just eat one and you’ll see!
With the new bar upstairs what exciting features can guests expect?

Our mate Luke Ridge (at Dandelyan) has pulled together a “Greatest Hits” list from some of his peers in London’s best cocktail bars. We have got some of the greatest drinks in London and all of those bartenders will be making guest appearances and generally causing havoc upstairs. It’s going to be a creative space for talented bartenders and brands to showcase their talents and products. Plus it’s a great spot for anyone to have a negroni before the theatre, and some late-night drinks after dinner here or elsewhere.
What are your recommended drink pairings?
We think the best drinks to have with our food are beer and whiskey. We have a rolling selection of American craft beers from the Flying Dog Brewery and thanks to our mates at Bulliet Bourbon, we are offering boilermakers to everyone, and they are going for it! We also do pickle backs with our own pickle and chilli brine. They’re good, like hella good!

Your foodie #LocalLoves in London?
Our neighbours at Hoppers are serving some amazing dishes and they’re super professional. Worth waiting an hour for, which you can spend in our bar! Outside? As the summer approaches it’s all about London Union’s Street Feast. Dalston Yard just opened up for 2016, the brilliant Dinerama is going full pelt, they constantly innovate and their vibes are no doubt the strongest in London!
